Ingredients

  • 4 cups cold cooked jasmine rice
  • 2 tbsp vegetable oil
  • 2 eggs, beaten
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 cup pineapple chunks
  • 1 cup cooked chicken or shrimp, optional
  • 2 tbsp soy sauce
  • 1 tbsp fish sauce
  • 1 tsp curry powder
  • 1/2 cup frozen peas
  • 1/3 cup roasted cashews
  • 3 green onions, sliced
  • 1 lime, cut into wedges

Instructions

  • Prepare ingredients. Cut one side off and carefully create a pineapple canoe for serving; reserve pineapple pieces. One bowl with oil, onion, garlic, and bell pepper. Second bowl with reserved pineapple, cooked proteins, soy sauce, fish sauce, curry powder, and peas. Get rice ready and a spare plate for eggs. The dish comes together quickly.
  • Heat 1 tbsp oil in a wok or large skillet over high heat.
  • Add the eggs and scramble until just set.
  • Transfer the eggs to a plate.
  • Add the remaining oil, onion, garlic, and bell pepper.
  • Cook for 2-3 minutes.
  • Add the rice and break up any clumps.
  • Stir in the pineapple, cooked protein, soy sauce, fish sauce, curry powder, and peas.
  • Cook for 3-4 minutes, stirring frequently.
  • Return the eggs to the pan.
  • Fold in the cashews and green onions.
  • Serve with lime wedges.
