Ingredients

  • 1 lb of chicken
  • 1 tbsp vegetable oil
  • 2 tbsp taco seasoning
  • 1 Oranges
  • 2-4 Limes
  • 10 small corn or flour tortillas
  • 1/4 cup diced onion
  • 1/4 cup chopped cilantro
  • 1 lime, cut into wedges
  • Salsa, jalapeño, crema, cojita cheese (optional)

Instructions

  • Chop chicken into small pieces. Add juice of an orange, Taco Seasoning and Cilantro (optional) and let it marinate for an hour or longer in storage bag or covered bowl.
  • Heat the olive oil in a skillet over medium heat.
  • Add the chicken with the marinade in small batches.
  • Cook for 5-10 minutes. Stir sometimes. Let the meat to release the liquids and brown. Transfer finished meat to clean bowl.
  • Repeat cooking batches of meat until all is cooked.
  • Begin warming the tortillas. Wrap in foil and heat in oven or toaster. Grill or pan-fry as another option.
  • Turn off heat on stove. Return cooked meat to pan and toss with juice of a lime and warm over residual heat.
  • Divide the chicken among the tortillas.
  • Top with cilantro and white onion.
  • Serve with lime wedges. Top with optional salsa, fresh diced jalapeno, crumbled cojita cheese, or drizzled with crema
